Cookies and Cream Fudge Brownies
So a couple of weeks ago I decided it was time for something sweet. I had a quick browse through my cookbooks and settled on Lorraine Pascale’s recipe ‘Cookies and Cream Fudge Brownies’ from her cookbook ‘Baking Made Easy’.
This recipe takes a little bit of time but the directions given are easy to follow. The recipe relies on beating a lot of air into the egg mixture as it doesn’t have any raising agents – so make sure you beat the eggs for long enough and don’t accidentally knock the air out of the mixture. The thing that stood out for me was the inclusion of Oreo cookies – definitely something different!
And this was the end result! The brownies are nice and fudgy with a lovely moist texture. The Oreo Cookies also bring a different texture and flavour that you don’t normally expect in a brownie. They are very rich so a little slice goes a long way. I tend to have mine with a bit of vanilla ice- cream just to cut through some of the richness. Overall I really like these brownies! I think they might also work well with a chocolate/caramel biscuit.
